Episode 2: On a Roll
Welcome back to Baking and Boozing!
I am so excited to present today’s dessert and cocktail pairing: Pistachio Roulade with a Raspberry Vodka Lemonade. These flavors are light and refreshing and are the perfect entrance into spring. Try them out as soon as you can and let me know what you think!
Pistachio Roulade Ingredients
4 eggs
130g sucrose
70g pistachio flour
60g AP flour
5g vanilla extract
2 tbsp. warm water
green gel food coloring
10-15 raspberries
1-2 tsp. powdered sugar
Preheat oven to 375*F.
Line a jelly roll pan with parchment paper
Whip your eggs and sugar with until light and fluffy
Add the water, food coloring, and vanilla extract. Whisk to incorporate. Will be VERY liquid.
Fold in your sifted flour in 3 or 4 stages.
Pour the mixture into jelly roll pan and bake for about 10 mins, or until done.
Remove cake from the oven when the edges have a slight golden brown hue.
Slide a paring knife around the edges to ensure release. Sift enough powdered sugar to cover the top and cover with a clean towel.
Flip over and release from pan. Roll and let cool in the towel (parchment paper still on). See video for these techniques.
Make cream cheese frosting. Slice raspberries.
When cool, unroll cake, and peel off parchment. Spread frosting and scatter raspberries. Reroll and set in refrigerator.
Decorate as needed with extra raspberries and frosting.
Cream Cheese Frosting Ingredients
12 oz cream cheese, room temp
170 butter, room temp
225 g powdered sugar, sifted
5g vanilla extract
Beat together cream cheese and butter until combined and smooth.
Beat in vanilla.
Add in powdered sugar. Mix on low until fully combined.
Fresh Squeezed Lemonade
100g sucrose
1 cup water
¾ cup fresh squeezed lemon juice
Boil sugar and water together. Let cool.
Stir to combine with lemon juice. Refrigerate.
Raspberry Vodka Lemonade
1 ½ ounces vodka
5 fresh raspberries
4 fl. oz. lemonade
4g sugar (optional)
In a cocktail shaker, muddle raspberries and sugar.
Add vodka and lemonade and shake until well mixed
Pour over ice in a glass. Garnish with a twist of lemon and a fresh raspberry.
