Episode 4: Barrel Roll
Well, we did it again! Another successful baking session with an accompanying (and dare I say absolutely delicious!) classic cocktail. I hope you try these recipes and let me know what you think!
Lemon Sandwich Cookie Bites
200g sucrose
Zest of 2 lemons
86g cream cheese
225g unsalted butter, softened
1 large egg yolk, room temp
5g vanilla extract
340g flour
DIRECTIONS
Preheat oven to 350°F. Prep baking sheets with parchment paper.
Beat butter, cream cheese, and sugar together.
Beat in egg yolk, zest, vanilla, and salt until fluffy - approx 3 mins.
Add flour in 3 additions. Mix until just incorporated.
Fill pastry bag with batter and pipe 1.5” rounds of dough.
Bake 7 to 11 mins. They bake quickly, so watch them!
Cool completely before filling.
Store at room temperature for up to 3 days.
Lemon Buttercream Filling
114g unsalted butter
190g powdered sugar
2g vanilla extract
Zest of 1 lemon
20g fresh lemon juice (or to taste)
1g salt
DIRECTIONS
Beat all ingredients together until smooth.
Fill piping bag with buttercream.
Pipe onto a cookie and sandwich with another cookie.
Aviation
2 ounces Gin
3/4 ounce fresh lemon juice
1/2 ounce maraschino liqueur
¼ ounce crème de violette liqueur*
Lemon peel or Luxardo maraschino for garnish (optional)
DIRECTIONS
Chill your glass using the method shown in the video
Fill cocktail shaker with ice.
Add all ingredients to shaker, cover and shake well until the container is cold.
Pour the mixture into the prepared glass.
Garnish (optional)
*As you’ll see in the video, we all added anywhere from ½ to ¾ of an ounce more.
